2017 Tormaresca Torcicoda Primitivo 5 ltr
The grapes were picked as soon as they reached complete and high ripeness levels. After pressing, the extraction, managed both by soft pumping over and rack and return (delestage) techniques, took place in stainless steel tanks and lasted thirteen days. During this phase, the wine completed the transformation of its sugar into alcohol at a temperature held to a maximum of 26° Centigrade. It then went through a complete malolactic fermentation in 60 and 130 gallon oak barrels coopered from French and Hungarian oak in which it then aged for approximately ten months. The final phase consisted of eight months of bottle aging before release.
